Cover the mix and let it sit for half an hour so it soaks up the water.

Give the basket a quick spray with grapeseed oil to keep things from sticking.

Use a spoon or scoop to shape the batter into balls about 2.5 to 5 cm wide.

Arrange the falafel balls with some space around them inside the basket. Do them in batches if you need to.

In a medium bowl, stir the dry falafel mix and water until it comes together into a batter.

Cook at 200°C for 5 minutes, then flip each ball carefully and cook another 5 minutes. Spray some grapeseed oil on them if you want.

Keep frying the rest of the batter in batches and enjoy them warm.
