Lemon Mini Pies (Print-Friendly Version)

# What You'll Need:

→ Base Mix

01 - 1 teaspoon baking powder
02 - 100 g plain wheat flour
03 - 150 g granulated sugar

→ Liquid Ingredients

04 - 3 large eggs
05 - 1 teaspoon vanilla extract
06 - 250 ml whole milk
07 - 80 g unsalted butter, melted
08 - 60 ml fresh lemon juice

→ Finishing Touch

09 - Powdered sugar, for dusting

# Step-by-Step Directions:

01 - Let it cool down all the way on a wire rack. Sprinkle powdered sugar over the top, then slice and enjoy.
02 - Once your batter’s poured into the greased pie dish, smooth it out a bit. Put it in the middle of your oven and bake about 45 to 50 minutes or until set and golden.
03 - Pour the liquid mix slowly into the dry stuff while stirring softly. Keep going until it looks like an even batter.
04 - Whisk eggs, milk, lemon juice, melted butter, and vanilla together in another bowl till there aren’t any lumps left.
05 - Dump baking powder, sugar, and flour into your mixing bowl. Mix them up with a whisk so it’s all spread around.
06 - Set the oven to 175°C to preheat. Grease up a 23 cm pie dish just a little.
