                Set your oven to 400°F (200°C) and prepare a baking pan by covering it with parchment paper.

                Combine mashed potatoes, shredded cheese, chives, bacon bits, egg, and a dash of salt and pepper in a bowl. Stir until it’s all blended.

                Roll the mixture into small, golf-ball-sized portions. Coat each one evenly by rolling in breadcrumbs.

                Arrange the breadcrumb-coated balls on the covered baking pan. Spray a bit of olive oil over the top.

                Pop the tray in the oven and bake for around 20 to 25 minutes, or until the outside is crispy and golden.

                Let them rest a few minutes before serving. Dig in and enjoy!
