Grab a big non-stick pan and brown the breakfast sausage until fully cooked. Move the cooked meat to a bowl lined with paper towels and put it aside. Clean the pan with a paper towel.

Using the same pan, melt 2 tablespoons butter over medium-high heat. Add the whisked eggs to the pan. When they start to firm up, stir them gently to scramble until almost set. Take the pan off the heat.

Take out the paper towel under the sausage but keep the meat in the bowl. Add your scrambled eggs to the sausage and mix them together gently. Wipe down the pan and warm it over medium heat.

Spread butter on one side of each bread slice. Put a slice into the pan with the buttered side down. Add a slice of Colby-Jack on top. Spoon about 1/2 cup of your egg-sausage mix over the cheese. Top with another cheese slice, then add another bread slice with the buttered side facing up.

Let the sandwich cook till the bottom turns golden, about 3-4 minutes. Flip it carefully and cook the other side until it's golden too.

Move the sandwich to a cutting board and cut in half if you want. Do the same steps for the leftover bread, cheese, and egg-sausage mix. Enjoy right away.
