Spicy Cheese Chicken Sandwich (Print-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 4-8 slices muenster cheese
02 - 4 tablespoons unsalted butter, softened
03 - 2 teaspoons minced garlic
04 - 1/4 teaspoon cayenne pepper (optional)
05 - 1/2 teaspoon paprika
06 - 2 cups shredded, cooked chicken (like rotisserie chicken)
07 - 4 tablespoons crumbled blue cheese
08 - 8 slices bread for sandwiches
09 - 1 teaspoon ground black pepper
10 - 1/2 cup ranch dressing (store-bought or homemade)
11 - 4 ounces softened cream cheese
12 - 1/2 cup your favorite hot sauce (e.g., Frank's Hot Sauce)

# Step-by-Step Directions:

01 - Grab a small mixing bowl and combine crumbled blue cheese, softened cream cheese, ground black pepper, cayenne, and paprika. Stir it all together until smooth, then put it off to the side.
02 - In another bowl, toss the shredded chicken with minced garlic, ranch, and your preferred hot sauce. Stir it well to be sure the chicken gets evenly coated.
03 - Spread butter on one side of each slice of bread. Flip them over and divide the cream cheese mix over half the slices. Spoon about 1/2 cup of the chicken filling on top. Cover with 1 or 2 slices of muenster cheese and top with the remaining bread slices, buttered side facing out.
04 - Spray a big pan with cooking spray and warm it up on low heat. Lay the sandwiches in and cook for about 5 minutes until the bottoms turn golden. Flip them and go another 5 minutes. If the pan isn't big enough, cook them in rounds.
05 - Take the warm sandwiches out of the pan and dig in right away. Add extra ranch, blue cheese dressing, or hot buffalo sauce on the side if you'd like.

# Helpful Notes:

01 - Keep leftover grilled sandwiches in aluminum foil in the fridge for no more than 48 hours. Warm them up in the oven at 175°C (350°F) for 10-15 minutes when ready to eat.
02 - Swap out the cheeses if you'd like. Cheddar, mozzarella, Monterey Jack, or Colby Jack all taste great.
03 - For an extra layer of flavor, think about adding some diced tomatoes, mashed avocado, or a handful of chopped celery to your filling or cream cheese spread.
