# Ingredients List:

→ Pasta

01 - 340 grams rotini noodles

→ Protein

02 - 300 grams cooked chicken breast, chopped

→ Sauce and Cheese

03 - 480 milliliters whole milk
04 - 115 grams cream cheese
05 - 100 grams shredded sharp cheddar
06 - 120 milliliters buffalo sauce

→ Thickening and Topping

07 - 100 grams panko breadcrumbs
08 - 28 grams unsalted butter
09 - 28 grams all-purpose flour

→ Garnish

10 - 2 sliced green onions

# Detailed Cooking Steps:

01 - Salt a big pot of water and bring it to a boil. Toss in the rotini and cook until it’s just right, following the package. Drain it well and set it aside.
02 - Heat up a skillet over medium. Season the chicken with salt and pepper then cook it until it gets a nice brown color, about 5 to 7 minutes.
03 - Melt butter in a saucepan on medium heat. Stir in the flour quickly to make a roux. Slowly whisk in the milk, keep stirring until it’s smooth. Mix in the cream cheese till it melts, then add the cheddar and buffalo sauce. Stir till it’s creamy all over.
04 - Stir together the pasta, chicken, and cheese sauce until everything’s nicely covered.
05 - Put the mix into a greased baking dish. Spread panko breadcrumbs over the top. Bake at 175°C for 20 to 25 minutes until bubbly and golden on top.

# Helpful Hints:

01 - You can add less or more buffalo sauce to make it as spicy as you like. Keep whisking while adding milk so the sauce stays smooth. For an extra kick, try a pinch of cayenne pepper.
