Set your oven to 175°C. Spread out the oyster crackers on a baking tray covered with parchment paper in a single layer.

Melt butter in a pot over medium heat. Toss in brown sugar, cinnamon, and vanilla. Stir constantly till everything melts. Let it bubble for 2 or 3 minutes so it thickens up.

Drizzle the warm caramel sauce over the crackers and stir gently to cover them all evenly. Then sprinkle salt on top for flavor.

Pop the caramel-covered crackers in the oven for 7 to 9 minutes. Watch them closely so they don’t burn.

Let the crackers cool fully right on the baking sheet. Once cold, break them into chunks and keep these in an airtight container to stay crispy.
