Cheesy Ramen Noodles (Print-Friendly Version)

# What You'll Need:

→ Noodles

01 - 2 packs of instant ramen noodles, skip the flavor packets

→ Broth and Dairy

02 - 1/2 cup milk or use any plain non-dairy milk
03 - 2 cups light chicken or veggie broth
04 - 1 cup cheddar cheese, shredded sharp
05 - 1/2 cup cream cheese, leave it out at room temp
06 - 1 tablespoon plain unsalted butter

→ Seasonings

07 - 1/4 teaspoon black pepper, ground
08 - 1/4 teaspoon onion powder
09 - 1/4 teaspoon garlic powder

→ Garnishes

10 - Chopped green onions, about 2
11 - Optional: shake of red chili flakes

# Step-by-Step Directions:

01 - Dig in right away while it's still hot, that's when it's best.
02 - Spoon cheesy ramen into bowls, then pile on green onions and if you want, dust with some red pepper flakes.
03 - Put noodles back in the pot and mix them around until they're nice and coated in sauce.
04 - Drop heat to low, toss in the cheddar a little at a time, and keep stirring until it all melts together.
05 - Sprinkle in pepper, onion powder, and garlic powder. Give it a thorough stir so the flavors really get in there.
06 - Reuse the saucepan, melt your butter on a medium flame, then add cream cheese and stir till it's all smooth. Pour in the milk slowly, whisking as you go so it blends well.
07 - Fill a medium pan with your broth and bring to a simmer. Toss in ramen and cook 3–4 minutes, stirring now and then, till tender. Drain them and set aside.

# Helpful Notes:

01 - Want it even creamier? Go with whole milk or a creamy non-dairy. Feel free to toss in sautéed veggies, any cooked meat or tofu, or amp up the flavors with extra spice.
