# What You'll Need:

→ Egg Mix

01 - 0.25 teaspoon cracked black pepper
02 - 0.25 teaspoon sea salt, fine
03 - 2 tablespoons milk, whole
04 - 6 eggs, large

05 - 1 cup (100g) grated cheddar, or whatever cheese you fancy
06 - 4 links breakfast sausage or 225g ground sausage
07 - 1 tablespoon butter, unsalted

→ Wraps

08 - 4 big wheat flour tortillas (20 cm wide)

09 - Salsa, chopped green onions, or hot sauce for enjoying

# Step-by-Step Directions:

01 - You can pop your rolled-up wraps seam side down into a hot skillet or a grill pan. Give them 1 or 2 minutes a side over medium, press them a tad so they go golden and melty inside. Grab some salsa, spicy sauce, or green onion to serve if you like.
02 - Bring the two sides of the tortilla in, then start rolling from the bottom nice and tight so all that tasty filling stays put.
03 - Pile the scrambled eggs into the center of each tortilla. Drop your sausage on top and finish things off with a shower of cheese.
04 - Soften up each tortilla in the microwave for 10 to 15 seconds or slide them, one at a time, into a dry hot skillet a few seconds on each side till they’re flexible.
05 - Toss your butter in that same skillet over medium. Pour in the egg blend and gently stir as it cooks till the eggs come together but are still glossy and soft. Take off the heat right away.
06 - Crack your eggs into a bowl, splash in the milk, sprinkle the salt and cracked pepper, and whisk everything till it’s all blended and smooth.
07 - Warm your skillet to medium, lay in sausage, and cook while flipping when needed. Go for well-browned and totally cooked—about 8–10 minutes for links or, if you’re using ground sausage, crumble it as it cooks until no pink's left. Set the sausage aside on a plate.

01 - Tightly wrap and chill leftovers in foil—good for 3 days. Warm them up before you eat.
02 - Freeze wraps once they’re cooled by wrapping in both plastic and foil. They'll last in the freezer for 2 months. Let them thaw in the fridge then heat really well before digging in.
