Cut the beef into thin strips about 1/2 inch wide. Slice against the grain so it's tender.

Mix together soy sauce, ground ginger, sugar, and cornstarch in a bowl. Whisk well until it's smooth.

Pour the marinade over the beef slices and make sure each piece is coated.

In a large skillet or wok, heat up 1 tablespoon of the oil on medium-high heat. Add the beef slices in small batches, stirring often, and cook for about 3 minutes or until browned. When done, set the beef aside.

After the beef is removed, toss the red onion into the same pan. Stir and cook for roughly 2 minutes, just until it softens slightly.

Add the green bell pepper next, and cook it for 2 minutes or until it starts to soften and turns bold in color.

Mix in the tomato wedges and let everything cook together for the flavors to blend.
