Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened and golden, about 5 to 7 minutes. Transfer to a plate and allow to cool.

In a large bowl, combine ground beef, sautéed onion, eggs, minced garlic, ketchup, parsley, breadcrumbs, milk, salt, Italian seasoning, and black pepper. Mix gently until just incorporated.

Form the mixture into a loaf approximately 20x10x7.5 cm on the prepared baking sheet. Bake uncovered for 40 minutes.

In a small bowl, whisk together ketchup, white vinegar, brown sugar, garlic powder, and onion powder until smooth.

Spread the glaze evenly over the meatloaf. Return to oven and bake for an additional 20 minutes, or until internal temperature reaches 71°C.
