Pineapple Coconut Snack (Print-Friendly Version)

# What You'll Need:

→ Main

01 - 1 cup of coconut shreds (either sweet or none)
02 - 1 whole pineapple, peeled and cut into easy-to-eat pieces

→ Optional Additions

03 - Fresh mint on top, just for looks
04 - A couple of tablespoons of maple syrup or honey
05 - A quarter cup of thick Greek yogurt

# Step-by-Step Directions:

01 - Pop all your coconut-covered pineapple bits on a big plate, throw them in the fridge for half an hour, and let them get cold and firm before you sprinkle some mint on top and share.
02 - Take each pineapple piece and smother it in the coconut mixture with your hands or a fork. Or if you feel lazy, just roll them straight in dry coconut shreds instead. Make sure they’re totally covered.
03 - Dump the coconut into a bowl, toss in yogurt if you want and add honey or maple syrup if you’re feeling fancy. Mix it up until it all comes together.
04 - Chop your peeled pineapple into chunks you can bite and have them ready to go.

# Helpful Notes:

01 - Skip the yogurt and swap honey for maple syrup to make it vegan, or use any plant-based yogurt you like.
