Transfer the dry mixture to a large lidded container, add apple wedges, secure lid, and shake vigorously to coat evenly.

Use a slotted spoon to take out the apples and gently shake off excess flour mixture. Arrange on a plate.

Whisk eggs and vanilla extract together in a separate bowl until smooth.

Submerge apple wedges fully in the egg mixture, coating evenly.

Return egg-coated apples to remaining dry flour mixture in container, then shake thoroughly to apply a second coat.

Combine brown sugar and reserved 1 tablespoon cinnamon in a small bowl and set aside.

Lightly spray the air fryer basket with olive oil nonstick spray. Arrange coated apples in a single layer, cooking in batches if necessary.

Spray tops of apples generously with olive oil spray and sprinkle half of the cinnamon sugar mixture. Air fry at 175°C for 6 minutes.

Flip the apple fries, spray with olive oil again, sprinkle remaining cinnamon sugar, and air fry for another 6 minutes at 175°C.
