Boil a large pot of water with a pinch of salt. Cook the bow-tie pasta as per the package instructions. Save 1 cup of its cooking water before draining.

As the pasta cooks, warm olive oil in a skillet over medium heat. Toss in the sausage, season lightly with salt and pepper, and cook until browned and crispy. Set aside on a plate.

In the same skillet, add the garlic, chopped onion, a little salt, and some pepper. Stir regularly for about 5 minutes until soft.

Toss the asparagus pieces into the skillet. Stir them around until they soften up, which will take about 6-8 minutes. Sprinkle a touch more salt and pepper.

Combine the cooked pasta with the vegetables in the pan. Pour in ⅔ cup of the pasta water and stir in the parmesan until it's all melty and mixed.

Break up the burrata and toss it gently through the pasta. Sprinkle chili flakes on top before serving.
