Peach Raspberry Delight (Print-Friendly Version)

# What You'll Need:

→ Peach Filling

01 - 75 g caster sugar
02 - 125 g fresh raspberries
03 - 5 ripe peaches, sliced

→ Cobbler Topping

04 - 2 tablespoons flaked almonds
05 - 1 teaspoon baking powder
06 - 90 g cold butter (either salted or not)
07 - 140 g plain flour
08 - 2 teaspoons of milk, and more if it seems dry
09 - Zest from 1 lemon
10 - 90 g caster sugar

→ Optional Garnish

11 - A little Demerara sugar if you'd like to sprinkle on top

# Step-by-Step Directions:

01 - Set your oven to 160°C with the fan or 170°C if not. Turn it on before you start anything else.
02 - Toss raspberries and peach slices with caster sugar in a bowl. Pop them into a baking dish. Let them sit there while you prepare the rest.
03 - Mix flour, baking powder, and sugar in a large bowl. Drop in your cool butter, then work it in with your fingers until it's crumbly with some tiny butter bits still there. Toss in the lemon zest. Pour in the milk and mix until you get a soft, sticky dough. Throw in a splash more milk if it doesn't come together.
04 - Drop blobs of your dough all over the fruit in the dish. Scatter flaked almonds on top. Demerara sugar goes on if you fancy it.
05 - Move the dish into your oven and let it bake for 25 to 30 minutes. Watch for bubbling fruit juice around the edges and a golden top.

01 - The peach skins add a different feel but you can take them off if that's not your thing.
