In a big bowl, throw in the cooked penne, feta, cranberries, walnuts, baby spinach, and red onion slices. Mix it up.

Grab a small bowl. Whisk orange juice, olive oil, honey, Dijon mustard, salt, and pepper until well blended.

Heat up a large pot of salted water till it bubbles. Cook the penne till it’s firm but not hard. Drain, rinse with cold water, and set it aside.
