Pancit Noodles (Print-Friendly Version)

# What You'll Need:

→ Sauces and Liquids

01 - 4 cups chicken stock
02 - 2 tablespoons oyster sauce
03 - ¼ cup soy sauce
04 - 2 tablespoons vegetable oil

→ Veggies

05 - 1 medium onion, thinly sliced
06 - 1 cup green beans, cut on a diagonal
07 - ½ cup sliced celery
08 - 4 cloves garlic, chopped up
09 - 1 medium carrot, cut into thin strips
10 - 1 small head of cabbage, shredded

→ Toppings

11 - 2 green onions, chopped
12 - Toasted garlic, if you like
13 - Lemon cut into wedges

→ Noodles

14 - 1 pound bihon rice noodles

→ Protein

15 - ½ pound cleaned shrimp, optional
16 - 1 cup shredded cooked chicken or pork slices

→ Seasoning

17 - ½ teaspoon black pepper, ground

# Step-by-Step Directions:

01 - Move everything to a plate. Sprinkle with the green onions and toasted garlic if you want. Add lemon wedges on the side to squeeze over.
02 - If you're using shrimp, pop them back into the pan. Mix everything up gently.
03 - Put the soaked rice noodles into the pan. Stir carefully so the noodles soak up the sauce and get mixed with the meat and veggies. Let it cook for 3 to 5 minutes till it’s nice and hot.
04 - Add chicken stock, soy sauce, oyster sauce, and black pepper all at once. Let everything simmer gently.
05 - Toss in the carrots, green beans, celery, and cabbage. Stir fry for 5 to 7 minutes till the veggies are just tender but still a bit crisp.
06 - Throw in shredded chicken or pork. Stir and cook it for a couple minutes till it’s warmed up.
07 - Pour in the other tablespoon of vegetable oil. Cook garlic and onions till you can smell them and they turn soft, about 2 or 3 minutes.
08 - Heat a tablespoon of vegetable oil over medium-high heat. Add shrimp and cook each side for about 2 minutes till they turn pink and cooked through. Take them out and set aside.
09 - Put rice noodles in warm water for 10 to 15 minutes until they soften. Drain well and set aside.

# Helpful Notes:

01 - If you want to skip meat, swap chicken and shrimp for firm tofu. Taste and add more soy sauce if needed. Drizzle some sesame oil on top before serving for an extra kick.
