Make sure the skirt steak fits your pan. Dry it well with a paper towel. Sprinkle salt and pepper evenly all over.

Warm up your pan on medium-high till it's hot. Add a splash of oil if you want. Cook the steak for about 3 minutes per side if you want it medium-rare. Take it off the heat and let it sit so the juice stays inside.

Melt the butter in another pan on low heat. Stir the chopped garlic constantly with a spatula until it turns light brown. Take it off right away so it doesn't burn. Put it in a bowl.

Slice the steak thin against the grain once rested. Pour the garlic butter on top. Sprinkle with parsley and serve fast.
