# Step-by-Step Directions:

01 - Chop potatoes into quarters and remove their skins. Soak them in cold water for 10 minutes, then drain off the water. Cut steak into 2-3 inch chunks. Rub the steak with avocado oil and seasoning. Let it rest for around 10-15 minutes.
02 - In a big pan, warm 2-3 tbsp of avocado oil at medium-high heat. Cook steak without moving it for 2 minutes. Flip the pieces, cook for 1 more minute, then lower the heat and let them go for another minute. Take the steak out, put it in a dish. In the same pan, melt 3 tbsp butter with 1 tbsp garlic until you can smell it. Coat steak with the garlicky butter, cook for 1 extra minute, then wrap it in foil.
03 - Add 2 tbsp of butter and the rest of the garlic to the pan, cooking until they smell wonderful. Stir in the heavy cream slowly, letting it simmer. Let it reduce for about 3-5 minutes. Add parmesan, red pepper flakes, and green onions. Whisk until smooth and thick. Add salt and pepper to tweak the taste.
04 - After boiling, drain the potatoes. Combine them with melted butter and half and half, mashing the whole thing into a smooth texture. Stir in Monterey Jack cheese, pepper, garlic powder, and salt.
05 - Scoop the mashed potatoes onto plates, pile the steak bites on top, and pour the creamy parmesan sauce over everything. Serve while hot.
