Watermelon Halloumi Salad (Print-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 3 cups peppery arugula leaves
02 - 1/2 lb (220 g) juicy watermelon
03 - 1/2 lb (220 g) Halloumi blocks

→ Dressing and Garnish

04 - 2 tablespoons fresh lime juice
05 - A squirt of balsamic glaze (if you feel like it)
06 - 1 tablespoon good olive oil

# Step-by-Step Directions:

01 - Pour some lime juice and a little balsamic glaze over everything right before you dig in.
02 - Put watermelon and a bunch of arugula on your plates, then drop the grilled Halloumi right on top.
03 - Splash some olive oil into a grill pan and warm it up on medium. Put in the Halloumi cubes, keep space between 'em, and grill them for two minutes on both sides.
04 - Chop the watermelon into chunky cubes about the same size as your cheese. Leave them aside.
05 - Dry off the Halloumi with paper towels, then slice it into thick, equal-sized cubes about an inch (2.5cm) across.
