Beef Creamy Noodle Dish (Print-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 16 ounces cremini mushrooms, sliced up
02 - 1 pound ground beef (lean, at least 90% or 93%)
03 - 6 ounces egg noodles, whole wheat or regular
04 - ½ teaspoon onion powder
05 - ½ teaspoon kosher salt
06 - ½ teaspoon black pepper, ground
07 - 1 ½ teaspoons garlic powder
08 - 2 teaspoons paprika, smoked
09 - 1 teaspoon dried thyme
10 - 1 tablespoon olive oil, extra-virgin

→ Sauce

11 - 2 tablespoons plain flour
12 - ⅔ cup full-fat Greek yogurt (or sour cream, room temperature, about 5.5 ounces)
13 - 1 15-ounce can beef broth, used in parts
14 - 1 tablespoon Worcestershire sauce
15 - 1 teaspoon Dijon mustard (optional step)

→ Garnish

16 - Chopped parsley or thyme leaves (optional)

# Step-by-Step Directions:

01 - Warm the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the ground beef along with the garlic powder, thyme, smoked paprika, salt, onion powder, and pepper. Break up the meat as it cooks and keep going until it’s nicely browned (about 6–8 minutes). If needed, pour off any grease that collects.
02 - Lower the heat to medium and toss in the mushroom slices with the beef. Stir them every now and then as they soften, shrink, and turn golden, which takes about 8–10 minutes.
03 - Meanwhile, fill a big pot with water and bring it to a rolling boil. Throw in the noodles and cook them until tender, following the package directions. Drain them thoroughly and set aside.
04 - Sprinkle the flour over the beef and mushroom mixture, stirring it to coat everything. Gradually pour in about a third of the beef broth while scraping the pan to release all the brown bits stuck to the bottom. Stir in the Worcestershire sauce and Dijon mustard (if using).
05 - Pour the rest of the beef broth into the pan and let the mixture come to a gentle boil. Lower the heat and, stirring occasionally, allow it to simmer for about 10 minutes.
06 - Take the pan off the heat for a bit to cool. Gently stir in the Greek yogurt (or sour cream) until it blends smoothly. Adjust the flavoring, adding more seasoning if needed.
07 - Spoon the stroganoff sauce over your noodles and sprinkle chopped herbs on top if you want. Another option is to mix the noodles directly into the sauce before serving.

# Helpful Notes:

01 - Skip fat-free Greek yogurt—it could clump up. Use room-temperature yogurt and stir it in only after cooling the pan off.
