Pour about 2 inches of oil into a big pot and warm over medium heat. Mix flour, salt, pepper, garlic powder, and paprika in a big bowl. In another bowl, beat egg and water together. Roll chicken in the flour mix to coat it well. Tap off extra flour, dunk in the egg mix, then coat with flour again. Put aside.

Get oil hot to 365-375°F, or check by dropping a bit of flour to see if it bubbles. Add a few chicken pieces at once (2-4 max) and cook until they turn golden, about 8-10 minutes per batch. Move cooked chicken to paper towels and set aside.

Turn oven to 450°F and put parchment paper or a silicone mat on a baking sheet. In a big bowl, stir flour, baking powder, salt, and baking soda. Cut up the butter or shred it, then mix into the dry stuff until it looks like breadcrumbs. Add buttermilk and stir with a spatula until soft dough forms.

On a floured surface, gently work the dough with your hands. Flatten into a rectangle and fold it three ways. Do this two more times. Roll dough to 0.5-inch thick and cut biscuits with a floured 2.5-inch cutter, reusing scraps to make 10-12 biscuits.

Put biscuits on your ready baking sheet and bake for 15-17 minutes, until they're slightly golden. Take them out and brush with melted butter.

Mix honey and pepper flakes in a small pot. Heat it up, then take it off the heat and add vinegar. Let it cool down before using or store it in a glass jar for later.

Cut biscuits in half. Put a chicken piece on the bottom half, drizzle with spicy honey. Add pickles if you want and enjoy.
