02 - 12 grams Italian seasoning
03 - 10 grams salt
04 - 440 grams all-purpose flour
05 - 12 grams sugar

→ Wet Stuff

06 - 30 milliliters olive oil
07 - 240 milliliters warm water (about 45°C)

→ Topping

08 - 8 grams grated Parmesan cheese
09 - 15 milliliters olive oil (to brush)
10 - 100 grams shredded mozzarella cheese
11 - 5 grams Italian seasoning

# Detailed Cooking Steps:

01 - Mix sugar, warm water, and yeast in a small bowl. Give it a light stir and wait 5 minutes till foamy.
02 - Grab a big bowl and toss in the flour, salt, and Italian herbs. Make a hole in the middle.
03 - Pour the yeasty water and olive oil into that hole. Mix it all up and knead for about 8 to 10 minutes till smooth and stretchy.
04 - Put the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and leave it for an hour till it doubles.
05 - Punch the dough down and put it on a floured surface. Roll into a rectangle around 30 cm by 15 cm.
06 - Brush the dough with olive oil, then spread the mozzarella, Parmesan, and Italian herbs evenly. Press lightly so they stick.
07 - Cover it and wait another 30 minutes.
08 - Heat the oven to 190°C. Bake the dough for 25 to 30 minutes until golden on top and sounds hollow if you tap it.
09 - Set the bread on a wire rack and cool for at least 15 minutes before slicing.

# Helpful Hints:

01 - Brush with egg wash before baking if you want a crunchier crust.
