Mix sugar, warm water, and yeast in a small bowl. Give it a light stir and wait 5 minutes till foamy.

Grab a big bowl and toss in the flour, salt, and Italian herbs. Make a hole in the middle.

Pour the yeasty water and olive oil into that hole. Mix it all up and knead for about 8 to 10 minutes till smooth and stretchy.

Put the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and leave it for an hour till it doubles.

Punch the dough down and put it on a floured surface. Roll into a rectangle around 30 cm by 15 cm.

Brush the dough with olive oil, then spread the mozzarella, Parmesan, and Italian herbs evenly. Press lightly so they stick.

Cover it and wait another 30 minutes.

Heat the oven to 190°C. Bake the dough for 25 to 30 minutes until golden on top and sounds hollow if you tap it.

Set the bread on a wire rack and cool for at least 15 minutes before slicing.
