In a large bowl, combine ground chicken, diced jalapeño, shredded pepper jack cheese, chopped onion if using, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Mix gently but thoroughly to integrate all ingredients.

Divide the mixture into four equal portions and shape each into a patty approximately 2 cm thick.

Preheat a grill or skillet over medium-high heat and lightly oil the surface. Cook patties for 5 to 6 minutes on each side until the internal temperature reaches 74°C.

During the final minute of cooking, place a slice of pepper jack cheese on each patty and cover to melt the cheese.

Lightly toast the burger buns on the grill or in a toaster until golden.

Spread mayonnaise or chipotle mayonnaise on the top buns. Layer lettuce, tomato slices, and onion rings on the bottom buns. Place the hot patties with melted cheese on top of the vegetables, add guacamole, and cover with the top buns. Serve immediately.
