Using a sharp knife or mandoline, cut the cucumbers into thick slices about ½ cm (¼ inch) wide. Don't peel them.

Dice up the jalapeno and red onion. Add the cucumber slices into a mixing bowl or jar, then layer the diced jalapeno and onion on top.

In the bowl, combine cream cheese, cheddar cheese, sour cream, smoked paprika, garlic powder, and sea salt. If you like, add a little soy sauce.

Mix everything really well in the bowl, or if you're using a jar, close it with a lid and shake until the creamy mixture covers everything evenly.

Move the cucumber salad to a serving dish. Sprinkle some sesame seeds on top. Serve it cold.
