Island Beef Pastry (Print-Friendly Version)

# What You'll Need:

→ Dough

01 - 1 tsp turmeric
02 - ½ cup cold shortening
03 - 1 tsp salt
04 - 2 ½ cups all-purpose flour
05 - ½ cup cold butter, cubed
06 - ½ cup ice-cold water

→ Filling

07 - 1 tsp allspice
08 - ½ cup breadcrumbs
09 - 1 egg, for egg wash
10 - 1 tbsp curry powder
11 - ½ tsp cayenne pepper, optional
12 - 1 tbsp soy sauce
13 - 1 small onion, finely chopped
14 - ½ cup beef broth
15 - 1 tsp thyme
16 - 1 lb ground beef
17 - 2 cloves garlic, minced
18 - 1 tsp salt
19 - ½ tsp black pepper

# Step-by-Step Directions:

01 - Combine turmeric, salt, and flour in a bowl. Work the butter and shortening into the flour until it feels crumbly. Slowly add iced water, kneading it into a firm dough. Wrap in plastic and chill for 30 minutes.
02 - Brown the ground beef in a skillet on medium heat. Stir in garlic, onion, thyme, black pepper, salt, allspice, and cayenne. Add curry powder, soy sauce, and broth. Cook until thick, then mix in breadcrumbs and let it cool.
03 - Preheat the oven to 375°F (190°C). Roll out the dough and cut out circles about 6 inches wide. Add 2 tablespoons of the filling to one side of each circle. Fold the dough over, press down the edges with a fork, and brush with the egg wash.
04 - Put the patties on a baking sheet lined with parchment paper. Bake for 20–25 mins until golden and crispy.

# Helpful Notes:

01 - To get a super flaky crust, keep your butter and shortening chilled. Handle the dough as little as possible for a soft texture.
02 - Want more spice? Adjust the cayenne, or try adding finely diced Scotch bonnet pepper for authentic heat.
03 - Store leftovers in the fridge for three days, or freeze unbaked ones for up to three months. If frozen, bake at 375°F for 30-35 mins.
