01 -
Cut the chicken breasts thin by slicing them sideways.
02 -
Mix pickle juice and milk in a bowl. Put the chicken in and let it soak anywhere from half an hour up to 4 hours.
03 -
Put mayo, honey, BBQ sauce, mustard, lemon juice, and paprika into a small bowl and stir. Chill until you're ready to use it.
04 -
Heat the grill to medium-high and add a little oil to stop sticking.
05 -
Take chicken out of the soak and pat it dry. Grill for 4-5 minutes on each side until it's 74°C inside.
06 -
Right before the chicken is done, add a slice of cheese on each piece and let it melt.
07 -
Slather butter on the cut sides of buns. Toast them on the grill or in a pan until they turn golden and crispy.
08 -
Spread the honey BBQ mayo on the bottom bun. Layer on lettuce, tomato, then grilled chicken with melted cheese. Add bacon and more sauce if you like. Finish with the top bun.
09 -
Eat right away while everything's juicy and warm.
