# What You'll Need:

→ Pizza Dough

01 - 1 round of fresh dough for pizza, about 250 grams, either bought or homemade.

→ Lemon Brine

02 - 1 tablespoon flat-leaf parsley, chopped finely.
03 - 0.25 teaspoon finely ground salt.

10 - 150 grams of mozzarella (fresh), sliced into 1.5 cm pieces—or firm mozzarella shredded (about ½ to ⅓ cup).

11 - A fresh squeeze of lemon juice, about 1 tablespoon.
12 - 2 tablespoons parmesan cheese, grated fine.
13 - Roughly 1 tablespoon of flat-leaf parsley, chopped.
14 - Ground black pepper for seasoning, use as needed.

# Step-by-Step Directions:

01 - On a piece of parchment paper, press the dough outward from the middle using your hands. Make it into a 9x13-inch (23x33 cm) shape. Then move it onto the backside of a baking tray or a pizza peel.
02 - If your fresh mozzarella comes in water, slice it into 1.5 cm chunks. Use a paper towel to gently dab and soak up moisture if needed.
03 - Put olive oil, water, garlic, parsley, salt, pepper, lemon juice, and zest in a jar. Close it and shake well until combined and smooth.
04 - Use your fingertips to softly press small dents into the dough. Pour the lemon brine across it, letting the brine settle into the indents. Add slices or shreds of mozzarella evenly.
05 - Slide the prepared pizza from the peel onto a preheated pizza stone. Bake it at a high temperature until the cheese melts and bubbles, and the edges get golden and crispy—8 to 10 minutes in a fan oven.
06 - Once the pizza is hot, drizzle it with fresh lemon juice. Sprinkle parmesan and parsley on top, then add black pepper. Slice and enjoy while warm!
