01 - Thinly sliced 600 g potatoes (Yukon or russet work great)
02 - 2 onions, sliced thin

03 - 4 tablespoons unsalted butter
04 - 720 ml whole milk
05 - 225 g mix of sharp cheddar and Gruyere cheese

→ Meat

06 - 340 g crispy cooked bacon, crumbled

→ Pantry

07 - 2 tablespoons olive oil
08 - 4 tablespoons plain flour
09 - Salt to your liking
10 - Black pepper to your liking

# Detailed Cooking Steps:

01 - Set oven to 175°C. Grease a 23x33 cm baking dish or a deep 23x23 cm one with butter and keep it handy.
02 - Warm olive oil in a medium pan over medium heat. Toss in sliced onions, sprinkle with salt and pepper. Stir now and then till they're golden and caramelized. Take off heat and let sit.
03 - Clean out the pan used for onions. Cook bacon until it's crispy. Or, pop it in the oven while onions cook to save time. Drain fat from bacon and wipe pan clean.
04 - Melt butter on medium heat. Stir in flour to make a roux, cook for about 2 minutes. Slowly pour in milk while whisking. Let it simmer and thicken a bit for 2-3 minutes. Take it off the heat.
