# Step-by-Step Directions:

01 - Lay your hot fries out on a big plate. Spoon on plenty of cheese sauce. Load them up with whatever toppings sound good—like scallions, onions, jalapenos, fresh herbs—then add a bold drizzle of voodoo sauce. Best eaten right away so everything stays crispy.
02 - In a bowl, mix up mayo, ketchup, Dijon, hot sauce, garlic powder, smoked paprika, vinegar or lemon, and sugar or honey until it’s all silky. Taste it as you go—add more heat or tang if you want.
03 - Grab a saucepan and warm the butter over medium. Stir in flour and let it cook for a minute or two. Splash in your milk slowly, always stirring until you’ve got a thick, smooth mix. Sprinkle in cheese, Cajun spice, salt, and black pepper. Keep stirring until perfectly melty and smooth. Let it hang out on low so it stays warm.
04 - If you’re working with fresh potatoes, cut them into chunky fries then dunk them in cold water for half an hour. Dry them off well, toss with oil and all the seasonings, and pop into the oven at 425°F (220°C) for about 25 to 30 minutes or fry them in an air fryer till golden. Got frozen fries?
