01 - Cut 3 medium zucchinis into fries about 7.5 cm long

→ Spices

02 - 1 tablespoon Italian herbs mix
03 - 1 teaspoon black pepper
04 - 1 teaspoon salt

→ Breading

05 - 35 g (1/3 cup) Parmesan cheese, grated
06 - 240 ml (1 cup) panko or Italian-style breadcrumbs
07 - 2 large eggs, beaten smooth
08 - 120 ml (1/2 cup) regular flour

→ Finishing

09 - Spray with 2 tablespoons oil

# Step-by-Step Directions:

01 - Set flour, salt, pepper, and Italian herbs on a big plate. Beat eggs with a whisk in a small bowl until smooth. Mix Parmesan into breadcrumbs in another bowl.
02 - Slice zucchini into 7.5 cm sticks. Roll each in the flour mix so it’s covered. Dip them into eggs and let the extra drip off. Press each one into the breadcrumb and Parmesan mix so it sticks well.
03 - Spray the air fryer basket lightly with oil. Lay fries in one layer, don’t stack. Spray fries too. Air fry at 204°C for 9 minutes until they turn golden and crunchy.
04 - Take fries out carefully and eat right away while they’re crisp and packed with herb and Parmesan flavor.

# Helpful Notes:

01 - Swap regular flour for almond or coconut flour and breadcrumbs for crushed pork rinds or almond meal mixed with nutritional yeast to go gluten-free or low carb. Adjust spices and cooking time to fit.
02 - Try swapping zucchini for cut-up eggplant or green beans. If you use eggplant, salt it first to pull out moisture before breading.
