Let your puffs sit for a few minutes after they come out of the oven. Then go ahead and grab your favorite dip if you want and dig in.

Put your baking sheet in the hot oven and let everything get crisp and browned for about 20 to 25 minutes.

Set the coated rounds on a parchment-lined baking sheet. Make sure you leave a gap between them so they cook up nice and even.

Take each ball and cover it with breadcrumbs all over until they look good.

Use your hands or a scoop to make the seasoned mash into balls about the size of a golf ball.

Dump the cold mashed potato, cheddar, eggs, flour, garlic powder, salt, and pepper in a big bowl. Give everything a really good mix until it looks the same all the way through.

Crank your oven up to 400°F (200°C) and wait until it’s nice and hot.
