Cheesy Potato Puffs (Print-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 1 cup breadcrumbs
02 - 1 teaspoon garlic powder
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon salt
05 - 1/2 cup all-purpose flour
06 - 2 large eggs
07 - 1 cup shredded cheddar cheese
08 - 2 cups leftover mashed potatoes

# Step-by-Step Directions:

01 - Let your puffs sit for a few minutes after they come out of the oven. Then go ahead and grab your favorite dip if you want and dig in.
02 - Put your baking sheet in the hot oven and let everything get crisp and browned for about 20 to 25 minutes.
03 - Set the coated rounds on a parchment-lined baking sheet. Make sure you leave a gap between them so they cook up nice and even.
04 - Take each ball and cover it with breadcrumbs all over until they look good.
05 - Use your hands or a scoop to make the seasoned mash into balls about the size of a golf ball.
06 - Dump the cold mashed potato, cheddar, eggs, flour, garlic powder, salt, and pepper in a big bowl. Give everything a really good mix until it looks the same all the way through.
07 - Crank your oven up to 400°F (200°C) and wait until it’s nice and hot.

# Helpful Notes:

01 - If you use chilled mashed potatoes, it’s way easier to keep the balls from falling apart when they bake.
