01 - 1 pound lean ground beef
02 - 1 egg
03 - 2 ounces feta cheese, broken up
04 - 1/3 cup panko or gluten-free breadcrumbs

15 - 1 1/2 cups plain Greek yogurt
16 - Juice from half a lemon
17 - 1 tablespoon fresh dill, chopped
18 - 1 cup cucumber, shredded and squeezed dry
19 - Salt and pepper, use however much you prefer (about 1/4 teaspoon fine sea salt is good)
20 - 1/2 teaspoon grated garlic or swap in 1/4 teaspoon garlic powder

# Step-by-Step Directions:

01 - Fire up your oven to 450°F. Grab a baking pan, then line it with parchment or foil. Give it a quick spray or a brush of oil to keep things from sticking.
02 - Dump breadcrumbs, parsley, feta, onion, garlic, dried oregano, lemon zest, lemon juice, spices, egg, salt, and pepper into your big bowl. Stir it all up really well.
03 - Now, gently work in the ground beef with your hands till it's just mixed in. Scoop out tablespoon-sized amounts and shape 'em into balls. Don’t squish too much.
04 - Arrange the raw meatballs on your prepared pan. Give the tops a spritz of olive oil if you want. Slide the pan onto the center rack. Bake about 10 to 12 minutes, or until they're golden and browned.
05 - As the meatballs cook, toss all tzatziki ingredients into a medium bowl. Stir until it's blended and smooth. That's it.
