Pop the finished balls on a parchment-lined tray and put them in the fridge for at least half an hour or until they’re firm.

Cover each ball evenly with graham crumbs by rolling them around in a little bowl or plate.

Scoop out some of the mix, then roll it with your hands into balls about an inch wide.

Stir in the mini chocolate chips, making sure they’re spread out in the mix.

Pour in the vanilla extract and mix it well so every bit gets some vanilla.

Grab a big bowl and mix the chopped pecans, soft cream cheese, and powdered sugar until it's smooth and all blended together.
