Turn your oven to 190°C. Butter the muffin tin well, paying extra attention to the rims.

Heat the butter in a saucepan over medium. Stir in the milk and let it just begin to bubble.

Dump the flour into the saucepan all at once. Keep stirring hard with a wooden spoon on low until the dough comes together and pulls away from the pan edges.

Take the pan off the heat and set aside for 5 minutes to cool slightly.

Work in the eggs one at a time, stirring each thoroughly with your spoon before adding another. It might separate first but will smooth out and get glossy after some mixing.

Scoop the dough into the muffin tin evenly. If desired, sprinkle a little sugar over the tops.

Cook them in the oven for about 30 minutes until puffed up and golden.

Let them cool down a bit. Drizzle with honey, and serve with fresh fruit or cream if you like.
