Butter a 9×13-inch pan. Spread croissant pieces across the bottom.

Scatter your cooked sausage and grated cheese on top of the croissant base.

In a big bowl, beat eggs, milk, powdered mustard, salt, and pepper until smooth.

Drizzle egg mix over everything, then push down lightly so croissants soak up the liquid.

Wrap with plastic and stick in the fridge overnight or at least 2 hours.

Heat oven to 350°F (175°C). Take the dish out and let it warm up while oven heats. Cook without covering for 40-45 minutes until golden on top and firm in the middle.
