Spread a tablespoon of pesto on one side of each slice of bread, making sure it covers evenly.

Lay mozzarella (shredded or fresh slices) on two of the pesto-covered bread pieces, using plenty to cover the surface. You can add Parmesan cheese on top if you'd like. Close the sandwich by placing the other slices of bread on top, pesto touching the cheese.

Coat the top and bottom of each sandwich lightly with the softened butter so the crust turns crunchy and golden when cooked.

Warm a griddle or skillet on medium heat. Grill the sandwiches for 2-3 minutes on each side. Press them gently with a spatula while cooking until the cheese melts and the bread is crispy and golden.

Take the sandwiches out of the pan, slice them down the middle, and serve right away while they’re warm.
