Set your oven to 175 degrees Celsius. Cover a 20x20 cm baking dish with parchment paper.

Melt butter and chopped chocolate in a microwave-safe container. Heat it for 30 seconds at a time and stir after each until smooth.

Mix sugar into the melted butter mix. Beat in the eggs one by one, mixing well each time. Toss in vanilla, vinegar, and red coloring and stir it up.

Sift together cocoa powder, flour, and salt in another bowl.

Slowly add the dry stuff to the wet mix. Stir gently till just mixed in so it doesn’t get tough. If you want, fold in those white chocolate chips now.

Spread the batter evenly in the pan. Bake it for about 30 to 35 minutes. Check with a toothpick — it should come out with a few moist crumbs.

Let the brownies cool fully in the pan. Cut into 16 squares. You can melt some white chocolate on top if you want, then let it chill before serving.
