Put the balls on parchment paper in the fridge and let them sit at least 15 minutes to firm up.

Use your hands or a small scoop to shape the mixture into balls about 2.5 cm wide.

Throw ricotta, chopped pistachios, honey, vanilla, and salt into a bowl and stir until it’s smooth and creamy.

Give it a taste and add more honey if you like it sweeter.

Roll each ball in the leftover chopped pistachios so they’re nicely coated.

Take them out of the fridge, drizzle some honey on top, and if you want, sprinkle edible flowers or more pistachios before serving.
