09 - 115 g shredded cheddar, use lots or just a handful
10 - Cooking spray or spread of soft butter to grease your dish

# Step-by-Step Directions:

01 - Set your oven to 190°C. Don't start prepping anything else ’til it’s actually hot.
02 - Rub your 23x33cm pan all over with butter or give it a spray so nothing gets left out.
03 - Brown your sausage in a frying pan on medium, crumbling as you go. Once it’s all cooked through and crispy, get rid of any extra fat.
04 - In a big bowl, toss in pancake mix, milk, egg, melted butter, vanilla, syrup, and cinnamon. Mix it just enough. Don't stress about the lumps, really—leave them alone.
05 - Pour half the batter in your buttered pan. Layer all your cooked sausage on there, toss over some cheddar if you want, then cover it up with the rest of the batter so nothing peeks through.
06 - Pop the pan in your preheated oven right in the middle. Let it bake until the top’s dark golden and a toothpick poked in comes out pretty clean, so around 25 to 30 minutes.
07 - Hang on about 5 minutes so it cools off a bit. Cut slices, serve them while they’re still nice and warm. Go for an extra syrup drizzle if that sounds good.
