Coat a 12-cup muffin tin with cooking spray to stop the muffins from sticking and make cleanup a breeze.

Break up the sausage in a pan over medium-high heat and cook until it's fully brown, roughly 8-10 minutes. Pour off the grease and let it cool down a bit.

Crack and beat the eggs in a big bowl. Toss in the cheese and Bisquick, then add your cooked sausage. Stir everything until it's all mixed up well.

Scoop the sausage mix into each muffin cup, filling them about three-quarters of the way up so they can rise while baking.

Stick the muffin tin in your hot oven and bake for 18-20 minutes. They're done when they look golden on top and a toothpick comes out clean when poked in the middle.
