Lay out the puff pastry sheet after thawing it on a clean spot. Pop the brie right in the middle.

Dribble honey over the brie. Throw on the nuts, spread fresh thyme and rosemary all over, and dollop cranberry sauce on top.

Cover all the toppings with the puff pastry and pinch the edges real tight so nothing leaks. Cut off extra dough if needed.

Use the beaten egg to coat the wrapped dough. Pop it in a hot oven at 190°C and let it bake till the crust turns golden, about half an hour.

Give it a few minutes to settle so the cheese doesn't spill out. Best enjoyed warm, goes great with some fruit or crackers.
