Savory Pop-Tarts (Print-Friendly Version)

Flaky pop-tarts filled with scrambled eggs and hearty sausage gravy for a filling morning bite.

# Ingredients List:

→ Gravy

01 - 113 grams breakfast sausage
02 - 300 milliliters milk
03 - 16 grams all-purpose flour
04 - 1/2 teaspoon ground black pepper
05 - 1/4 teaspoon seasoning salt
06 - A pinch of dried sage (optional)
07 - 1/2 teaspoon minced fresh rosemary (optional)

→ Eggs

08 - 5 large eggs

→ Dough

09 - 115 grams unsalted butter
10 - 375 grams all-purpose flour
11 - 225 grams vegetable shortening
12 - 1 teaspoon salt
13 - 75 milliliters cold water
14 - 15 milliliters white vinegar
15 - 1 large egg

→ Toppings

16 - 60 grams shredded cheddar or jack cheese (optional)
17 - 2 tablespoons water (for egg wash)
18 - 1 large egg (for egg wash)
19 - Seasoning blend such as Everyday Seasoning or equivalent

# Detailed Cooking Steps:

01 - Put a pan on medium heat and cook the sausage till it’s nicely browned. Sprinkle in the flour and cook for a couple of minutes. Slowly whisk in the milk then toss in seasoning salt, black pepper, rosemary, and sage. Let it bubble until thick. Take it off heat and set aside.
02 - In another pan, gently scramble the eggs until they’re just set. Then take them off the heat and keep warm.
03 - In a big bowl, mix the flour and salt. Cut in the shortening and butter until you get a crumbly mix. Beat the egg with vinegar and cold water. Pour that into the dry stuff and stir until it makes a dough. Chill it in the fridge for 15 minutes.
04 - Roll the dough out on a floured surface till it’s about 3 mm thick. Cut into rectangles however big you want. Spoon sausage gravy and scrambled eggs onto half of them. Add cheese if you like. Top with the other rectangles and press edges tight.
05 - Mix the extra egg with water and paint that on top of each pop-tart. Pop them onto a baking sheet and bake in an oven set to 190°C for 25 minutes or till they turn a nice golden color.

01 - For extra flavor, toss cheese on top before baking. Or swap the sausage and eggs for jam or fruit preserves for a sweeter twist. Feel free to tweak the seasoning to your liking.
