Golden Onion Rice (Print-Friendly Version)

# What You'll Need:

01 - 1 ½ cups jasmine rice
02 - 2 tablespoons butter
03 - 1 large onion, cut into thin slices
04 - 2 cups broth or water (chicken or vegetable)
05 - 1 teaspoon salt
06 - ½ teaspoon black pepper
07 - 1 tablespoon olive oil
08 - 1 teaspoon garlic powder
09 - 1 tablespoon chopped fresh parsley

# Step-by-Step Directions:

01 - Warm the olive oil and 1 tablespoon butter in a big skillet over medium heat. Toss in your sliced onions with a tiny bit of salt. Cook them, giving them a stir now and then, until they turn soft and golden (this takes around 12-15 minutes). Put them aside when done.
02 - Wash the jasmine rice in cold water until it runs clear to get rid of extra starch. In a pot of medium size, melt your other tablespoon of butter over medium heat. Drop in the washed rice and mix it so the butter coats all the grains. Add your broth or water, then sprinkle in salt and black pepper. Let it come to a boil, then turn down to low heat, put a lid on it, and let it cook for 15-18 minutes until the rice feels soft and soaks up all the liquid. Take it off the heat but keep the lid on for 5 more minutes.
03 - Use a fork to fluff up your cooked rice and gently mix in those golden onions. Throw some fresh parsley on top if you want. It's ready to eat while it's still warm!
