# What You'll Need:

→ Beef Bites

01 - 900 grams sirloin or beef chuck, cut into 2.5 cm chunks
02 - 2 tablespoons olive oil for browning (if you want)
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 0.5 teaspoon black pepper, freshly cracked
06 - 1 teaspoon sea salt, fine grind

→ Potatoes

07 - 1 tablespoon olive oil
08 - 0.5 teaspoon sea salt
09 - 0.25 teaspoon black pepper
10 - 680 grams small Yukon Gold or baby potatoes, cut in half or quarters if needed

→ Garlic Butter Sauce

11 - 4 tablespoons unsalted butter, melted
12 - 1 tablespoon Worcestershire sauce
13 - 120 millilitres beef stock
14 - 1 teaspoon dried rosemary or about 1 tablespoon chopped fresh rosemary
15 - 1 teaspoon dry thyme or 1 tablespoon fresh thyme leaves
16 - 6 garlic cloves, finely chopped

→ Optional Garnishes

17 - A handful of chopped parsley
18 - Some freshly grated Parmesan

# Step-by-Step Directions:

01 - Make sure beef cubes are nice and dry with some paper towels. Shake in the salt, garlic powder, smoked paprika, and pepper all over so they're coated evenly.
02 - If you want to kick up the flavor, warm the olive oil in your skillet on medium-high. Brown the beef cubes a bit at a time, 1–2 minutes each side, until you see some nice color. Take them out and set aside.
03 - Toss potatoes in a big bowl with olive oil, salt, and pepper so they're covered everywhere.
04 - Dump melted butter, chopped garlic, thyme, rosemary, beef broth, and Worcestershire in a smaller bowl and whisk until mixed up well.
05 - First, put potatoes at the bottom of your slow cooker. Scatter the seasoned beef chunks on top. Pour the garlic butter mix over everything for good coverage.
06 - Pop the lid on and cook on high for 3–4 hours or low for 6–8 hours. Check and see if the beef and potatoes are fork-soft and full of buttery goodness.
07 - Right before you dig in, sprinkle with parsley. If you're feeling fancy, add some fresh Parmesan. Dish up warm and maybe have some salad or bread on the side.

01 - You don’t have to brown the beef first but it does make the taste deeper if you’ve got time.
02 - Go with Yukon Gold or baby potatoes—they don’t fall apart in the slow cooker.
