Crockpot Garlic Butter Beef (Print-Friendly Version)

# What You'll Need:

→ Beef Chunks

01 - 900 grams of beef, like chuck roast or sirloin, sliced into 2.5 cm pieces
02 - 1 tsp fine salt
03 - 1/2 tsp ground black pepper
04 - 1 tsp garlic powder
05 - 1 tsp smoked paprika
06 - 2 tbsp olive oil for optional browning

→ Potatoes

07 - 680 grams of small potatoes, like baby or Yukon Gold, cut in halves or quarters if needed
08 - 1/2 tsp fine salt
09 - 1/4 tsp ground black pepper
10 - 1 tbsp olive oil

→ Garlic Herb Butter Mix

11 - 4 tbsp melted butter (unsalted)
12 - 6 garlic cloves, finely chopped
13 - 1 tsp dried thyme or 1 tbsp fresh thyme leaves, whichever is handy
14 - 1 tsp dried rosemary or 1 tbsp fresh, minced rosemary
15 - 120 ml beef stock
16 - 1 tbsp Worcestershire

→ Toppings (Optional)

17 - 2 tbsp freshly chopped parsley
18 - Grated Parmesan (if you like)

# Step-by-Step Directions:

01 - Make sure the beef cubes are patted dry with paper towels so there's no extra water. Sprinkle them well with salt, pepper, paprika, and garlic powder.
02 - If you want more flavour, warm up some olive oil in a pan over medium-high heat. Sear the meat in small batches for about a minute or two per side, just until browned, then set aside.
03 - Grab a big bowl and mix your potatoes with olive oil, salt, and pepper. Stir everything so the potatoes are nicely covered.
04 - Stir together melted butter, chopped garlic, rosemary, thyme, beef stock, and Worcestershire in a small mixing bowl until smooth.
05 - Put the coated potatoes into the bottom of your slow cooker. Lay the seasoned beef over the top. Pour the garlic butter mixture all around for even coverage.
06 - Put the lid on and set your slow cooker to low for 6–8 hours, or high for 3–4 hours. The beef and potatoes should turn out soft enough to break apart with a fork, all soaked in garlic butter goodness.
07 - Just before dishing up, sprinkle on fresh parsley. Grated Parmesan is a nice addition if you're into that. Serve while warm with crusty bread or a fresh salad if you like.

01 - Browning the beef isn’t a must but gives extra flavour if you do it.
02 - Use baby or Yukon Gold potatoes since they hold up better and won’t overcook.
