Beefy Melt Burrito (Print-Friendly Version)

# What You'll Need:

→ Main Parts

01 - 100 g Fritos or Doritos chips
02 - 4 big flour tortillas
03 - 340 g ready Mexican rice
04 - 240 g refried beans
05 - 60 ml water or beef stock
06 - 1 bag (28 g) taco seasoning
07 - 450 g lean ground beef

→ Add-Ons

08 - Salsa for serving
09 - 120 ml sour cream
10 - 110 g Mexican cheese blend, shredded
11 - 240 ml warmed cheese sauce

# Step-by-Step Directions:

01 - If you want salsa, get it prepped now so it's ready once everything else is done. Burritos taste best hot.
02 - Want a crispy wrap? Pop the finished burritos into a dry pan, seam down, and toast each side until they're nice and golden. Usually takes a couple of minutes per side.
03 - Grab each tortilla and snug up the sides over the filling. Keep rolling from the bottom and tuck it all in tight so nothing falls out. Do this with all your tortillas and filling.
04 - Spread out a warm tortilla right on the counter. Scoop a few spoonfuls of beef and bean mix in the middle. Add some warm rice, sprinkle with chips, pour over the cheese dip, toss on some shredded cheese, and plop on a big spoon of sour cream.
05 - Didn't make your Mexican rice yet? Make it now, or just heat up a batch you've already cooked. Pop the tortillas in the microwave for half a minute so they're nice and bendy.
06 - Toss your beef into a hot pan and mash it up while it cooks so it all browns and there's no pink left. Pour in the taco seasoning and water or broth. Let it bubble for a minute, then stir in the refried beans. If it's too thick, splash in a little more water.

# Helpful Notes:

01 - Put burritos together right before you eat. The chips will stay crunchy that way.
02 - If you want to save them, wrap each up tight in foil and plastic. They'll keep a few days in the fridge. Freeze for a longer stretch, but skip the chips if you're freezing or they'll get soggy.
03 - To warm up, toss them in the oven, microwave, or on the stove till they're hot all the way through.
04 - Want a crunchier outside? Toast your wrapped burritos in a dry skillet for an extra tasty bite.
05 - Double up on the beans or rice ahead of time and freeze what's left. It'll be quicker next round.
