Nacho Fries (Print-Friendly Version)

# What You'll Need:

→ Fries

01 - One bag (450 g) of extra crispy frozen fries
02 - Enough veggie oil to deep-fry

→ Seasoning Mixture

03 - 2 teaspoons fine salt
04 - 1 teaspoon powder made from onions
05 - 1 teaspoon garlic powder
06 - 2 tablespoons smoked paprika
07 - 2 teaspoons chili powder
08 - 1/4 teaspoon cayenne (only if you want spicy)

→ Cheese Sauce

09 - 16 slices of melty American cheese
10 - A tablespoon of juice from pickled jalapenos
11 - 60 ml regular milk

# Step-by-Step Directions:

01 - Tear up cheese slices, pop 'em in a microwavable bowl, pour in milk and jalapeño juice. Microwave a half-minute at a time, stir in between, keep going till it's all gooey and smooth.
02 - Throw the fresh-fried fries into a big bowl, add the spice mix, and toss so they all get nice and coated.
03 - Pile your seasoned fries onto a platter or tray. Have the hot cheese sauce by the side, ready for dunking.
04 - Pour oil into your deep pan until you’ve got about 7.5 centimeters deep. Heat it to 180°C, use a thermometer if you’ve got one.
05 - In a little bowl, dump in chili powder, paprika, salt, garlic and onion powders, and cayenne if you’re using it. Give it a good stir so everything mixes together.
06 - Drop the frozen fries into the hot oil. Cook for 6–8 minutes, until they're crunchy and golden. Grab 'em out with a slotted spoon, let them rest on paper towels so they aren’t greasy.

01 - Don’t let the oil cool off, or the fries get soft and sad. These taste best right after they’re cooked, still hot and crispy.
