Tear up cheese slices, pop 'em in a microwavable bowl, pour in milk and jalapeño juice. Microwave a half-minute at a time, stir in between, keep going till it's all gooey and smooth.

Throw the fresh-fried fries into a big bowl, add the spice mix, and toss so they all get nice and coated.

Pile your seasoned fries onto a platter or tray. Have the hot cheese sauce by the side, ready for dunking.

Pour oil into your deep pan until you’ve got about 7.5 centimeters deep. Heat it to 180°C, use a thermometer if you’ve got one.

In a little bowl, dump in chili powder, paprika, salt, garlic and onion powders, and cayenne if you’re using it. Give it a good stir so everything mixes together.

Drop the frozen fries into the hot oil. Cook for 6–8 minutes, until they're crunchy and golden. Grab 'em out with a slotted spoon, let them rest on paper towels so they aren’t greasy.
