Once the potatoes are baked, cut them open carefully. Use a fork to fluff the insides so they're ready for toppings.

Clean the potatoes well and poke each one with a fork. Bake them at 400°F (200°C) for about 45 to 50 minutes until a fork slides in easily.

Warm up a big pan on medium. Put the ground beef in and cook it until it's nicely browned, using a spatula to break it apart. Drain off any extra fat.

Mix in the taco seasoning and half a cup of water with the cooked beef. Let it simmer for 5 minutes, stirring now and then until the sauce thickens up.

Pile the seasoned beef onto the fluffed potato halves. Sprinkle on the cheddar, sour cream, green onions, and tomatoes. Eat while everything’s warm.
