01 - 4 to 6 medium Russet potatoes
02 - 1 pound lean ground beef
03 - ½ cup shredded cheddar cheese
04 - ½ cup sour cream
05 - 1 ounce taco seasoning mix
06 - ¼ cup chopped green onions
07 - ½ cup diced tomatoes
08 - ½ cup water

# Step-by-Step Directions:

01 - Once the potatoes are baked, cut them open carefully. Use a fork to fluff the insides so they're ready for toppings.
02 - Clean the potatoes well and poke each one with a fork. Bake them at 400°F (200°C) for about 45 to 50 minutes until a fork slides in easily.
03 - Warm up a big pan on medium. Put the ground beef in and cook it until it's nicely browned, using a spatula to break it apart. Drain off any extra fat.
04 - Mix in the taco seasoning and half a cup of water with the cooked beef. Let it simmer for 5 minutes, stirring now and then until the sauce thickens up.
05 - Pile the seasoned beef onto the fluffed potato halves. Sprinkle on the cheddar, sour cream, green onions, and tomatoes. Eat while everything’s warm.
