Let the bars cool all the way. Pop them in the fridge for at least two hours before slicing.

Bake for around 30 to 35 minutes. The middle should feel a little wobbly but not wet.

Spread the cream cheese filling over the crust evenly. Top with butterscotch chips scattered around.

Whip the cream cheese smooth. Add sour cream, sugar, egg, and vanilla. Stir until smooth and creamy.

Stir crumbs, melted butter, sugar, and salt if you want in a bowl. Press the mix down firmly on the bottom of your pan.

Turn your oven on to 163°C. Line your baking pan with parchment paper, making sure some hangs over the edges to lift out easy.
